Today I Made Soup

Even though it’s warmer today for mid-October, I just had to make soup. There has been a familiar chill in the air other days and the trees are starting to show us who they really are under all that chlorophyll. I just learned that in the last few years. That the colors tree leaves turn in the Autumn are their true colors, which are revealed when they lose their green chlorophyll. I always loved the feeling of Fall and the gorgeous red, yellow, and orange colors of the leaves, but now I loved them even more. They were teaching us about letting go, and being who you really are.

So we don’t cook a lot lately. We are all (my husband, grown son in grad school, and me) working fulltime from home and it’s not something we do every night. We get some meals delivered, and a few meal kits. And we do take out. So actually cooking a bunch (like I used to do a lot when the kids were small) doesn’t happen much. But homemade soup — that it something I love and when Fall comes, I just have to make it.

Today I made potato leek soup. I love it so much it’s embarassing. The leeks are so mild and oniony and the potatoes are so comforting and filling. I love the process of making it. Cooking the leeks, peeling and chopping the potatoes. There is something so satisfying about the ritual of it to me. I use a hand masher to mash the cooked potatoes in the broth, so the soup stays thick and chunky. Some fresh…
